Nose

Instant: a big presence of red and black fruits: cherry, blackcurrant, blueberry, wild strawberry, acid raspberry (jam). It's quite sweet, just enough. Apple, rather on the acidity of the skin, tarte tatin, frangipane. There is a certain austerity with notes of polish, wax, but also more mineral things. On top of that are added notes of precious wood. In the background, we find the classic pastry cream, vanilla, almond, honey. A note of lemon meringue. With the opening, the whole becomes cooler: a touch of mint, even basil. Enchanting.



Taste

Less snapshot than the nose. It is drier with a woody side present, although mastered. Everything is present with much less intensity. Less gluttony on the palate. The acidity takes over compared to the fruits, but the red fruits, in particular the cherry, are always very present and it is rather not bad! It is more austere, more mineral, one even distinguishes a veil of smoke that gives a lot of body to this dram. It's very rich and this mouth offers us a different side of the nose, which makes the moment pleasant and very interesting.



Finish

quite long despite the reduction on notes of dried fruit, oak, vanilla and mint. Fresh.
